About Chef Fabiola

Fabiola is the founder and owner of Créole Fraîche; a catering business based in New York City. Fabiola is known for her creativity and ability to prepare delicious Haitian inspired cuisine, that is beautifully celebrated through classical culinary techniques and modern food styling.

 

Fabiola is a first generation Haitian-American born in Brooklyn, New York, who was raised by hardworking Haitian parents. Fabiola was deeply influenced  by Haitian hospitality and cuisine of which her mother embodied. She wanted to share this unique experience with the world and decided to pursue a career in Culinary Arts and Hospitality. She started her career at Johnson & Wales University where she pursued her degree in Culinary Arts. She later completed her Master's degree in Hospitality Management at Monroe College in New Rochelle, New York.

 Through the years, Fabiola gained hands-on experience under the influence of the world-renowned Chef, Marcus Samuelsson at Red Rooster Harlem. She created daily appetizer specials for celebrities and local guests alike. She continued to strengthen her techniques as Chef de Partie at Michelin Starred restaurants such as, Jean-Georges' The Mercer Kitchen, and Chef Jason Atherton's Clock Tower Restaurant. Fabiola ventured on in small business restaurants as Sous Chef and private event caterer. Later she developed a Culinary Program for teens at the High School of World Cultures with the hope to influence the future of the Culinary and Hospitality industry. Fabiola now resides in Queens New York.
